Adnams has appointed Ross Bott as executive head chef at The Swan in Southwold, following a major investment to transform the hotel into a top new eating and drinking destination in the area.
Bott joins from his most recent role working alongside renowned chef Atul Kochhar as his head chef, helping him to establish his new Hawkyns Restaurant & Bar in Amersham earlier this year.
This follows a career that began at the three Michelin Star restaurant La Tante Claire, under French chef Pierre Koffmann. He also boasts experience at Paris House in Milton Keynes, Danesfield House and the Macdonald Compleat Angler.
Now in his new position at The Swan, Bott will over the hotel’s two new restaurants, The Still Room and The Tap Room, which will open on October 12.
The Still Room will offer three tasting menus, while The Tap Room offers a more relaxed dining experience.

The Swan Hotel is coming toward the end of a major investment from Adnams, which will transform it into one of the region’s finest hotels and restaurants.
