The entire kitchen brigade at the Marquis at Alkham near Dover has been ‘refurbished’ following the departure of head chef Charlie Lakin.
He has been replaced by Michael Fowler who has assembled a brand new team of four – including his brother David who joins as sous.
The pair previously worked together at the Princes Golf Club and Brasserie in Sandwich where Michael was head chef while David completed his training.
Michael Fowler has worked in France and under Shaun Hill at Michelin-starred restaurant The Walnut Tree, near Abergavenny.
Under Lakin, The Marquis, which has 10 bedrooms and two vineyard cottages, was awarded one Rising One Star by Michelin in 2010
