The four-star Bedford Lodge Hotel & Spa has appointed Sean Melville as its new executive head chef, who will be responsible for its award-winning 2 AA Rosette Squires Restaurant.
Melville joins the hotel after working for a number of top establishments in London, including The Ritz and The Dorchester.
Commenting on the move, he said: “I am really looking forward to working with the team, taking classic British dishes and teasing them into exquisite new creations.”
The Bedford Lodge Hotel & Spa’s Squires Restaurant regularly updates its menu with the seasons and is named after its past owner George Baird, aka ‘The Squire’, a notorious gentlemen rider and trainer.
Sean continued: “I am passionate about working with fresh, local produce, grown and raised with care, and the hotel’s commitment to only using suppliers within a 50-mile radius resonates perfectly with me.”
