The new head pastry chef at the Corinthia Hotel in London has shaken up the hotel’s afternoon tea menu, creating a special offering designed to transport adults back to their younger years.
Sarah Barber, who joined the hotel in June this year, has come up with a new Childhood Memories Afternoon Tea that has been inspired by flashback flavours of some of the ‘top draw treats’ from yesteryear.
The new offering can be enjoyed under the chandelier in the luxury five-star hotel’s Lobby Lounge.
Some of the new flavours include ‘Snickers’ – peanut mousse, tanariva, and aerated salted caramel; ‘Jaffa Cake’ – chocolate orange pavé, ganache, and mandarin jam and ‘Bubblegum’ -macaroon covered in hundreds and thousands.
Barber joined the Corinthia in June and has worked in some of London’s top establishments including ME London, Dinner by Heston Blummental, The Ritz and The Connaught.
With over 18 years’ experience, Barber is also about to launch her first book, ‘Patisserie Perfection’, which will be sold at the hotel.
“I love the way that when you bite into something all these memories come flooding back from when you were younger. These fancies are based on my favourite tastes when I was growing up in Rochester, Kent. I used to sit for hours watching my grandfather cooking and then he would take me down to the local shop in Greenwich and buy me a treat,” says Barber.
