A vegetarian restaurant chain, run by a former deputy GM of Malmaison Liverpool, has launched a Kickstarter crowdfunding campaign aimed at raising finance to fit out a new restaurant in the city.
1847, named after the year that the world’s first Vegetarian Society was founded, is owned and managed by Damien Davenport, who launched the business with the aim of pushing the boundaries of vegetarian cuisine.
He launched the first restaurant in Manchester four years ago, before adding a second site in Birmingham two years later. It now employs 24 staff across the two venues, but will grow that to 36 if the Liverpool restaurant goes to plan.
Davenport, who knows Liverpool well as he was once deputy general manager at Hotel du Vin in the city, hopes to raise £60,000 from the crowdfunding.
Before his role at Hotel du Vin, Davenport was front of house manager at Malmaison in Manchester and then operations manager at the new Malmaison Liverpool.
The new proposed site for the new 1847 in Liverpool will be the brand’s biggest yet, explains Davenport.
“We have already identified a site and 1847 Liverpool will be our biggest,” says Davenport. “It will include over 60 covers and a separate bar area. It will allow us to offer our ‘pantry table’ — our new lunch selection of fantastic salads, savoury products and cakes for customers to enjoy at home or in the office.”
1847 also intends to launch its first ‘School’ at the Liverpool site, which will see a section of the restaurant devoted to the training and development of chefs in modern vegetarian and vegan cuisine.
“We are confident that we can make the project work, despite the hard graft that is undoubtedly going to be involved,” said Davenport, who added that while £60,000 was a large amount, “our plans have been costed and our realistic”.
If 1847 gains more than its targeted amount, it intends to put the surplus towards planning a fourth site.
It has so far raised £4,500, but the campaign still has 33 more days to run.
