Stuart Procter, general manager of The Stafford in London, revealed to Boutique Hotelier that the opening of the hotel’s new restaurant The Game Bird was his ‘best project ever’, as the new eatery was unveiled to guests at a launch party last night.
Procter, who rejoined the hotel in November 2015, told BH that he had loved working on the new restaurant with head chef James Durrant, who he described as a ‘brilliant man’.
The past week has seen The Game Bird open with a soft launch, with demand peaking at 70 covers a night for dinner bookings.
The restaurant now opens to the public today, with Procter saying he wants the eatery to bring in a younger crowd.
“We want to bring some atmosphere in and appeal to a younger demographic,” Procter told BH. “It’s been designed to bring people together and earn a reputation as a great bar and restaurant, where younger people want to come.”
The Game Bird was revealed last night at a glittering party attended by journalists, local residents and loyal guests.
Procter revealed that the new look had only taken one week to construct, with new building additions done externally before being brought it.
