Finesse Hotels establishes Catering Academy

Finesse Hotels, a collection of four hotels in the East Midlands, has launched the Finesse Catering Academy.

Spearheaded by Richard Donohue, who was recently appointed head chef at the group’s Lace Market Hotel in Nottingham, the training initiative will be available to F&B teams at Finesse Hotels including Donington Manor and Cathedral Quarter Hotel in Derby.

A series of sessions will be held to demonstrate new food-preparation skills, inspiring employees to experiment with ingredients and menu choices, as well as raising front-of-house service standards.

The academy is one of several initiatives being led by Donohue, who is also hoping to achieve a Michelin star at the newly-renovated Merchants Restaurant, at Lace Market Hotel.
