Fairmont St Andrews, a luxury five-star hotel, has appointed Tristan Allen as its new director of food & beverage.
Joining from the five-star Culloden Estate & Spa in Belfast, Northern Ireland, Allen will be responsible for guiding the venue and ensuring the service and standards are met and the performance objectives are achieved in his team of 75 people.
The hotel hopes Allen will bring a wealth of experience and knowledge as he has more than 15 years in the hospitality industry.
He attended the Ballymaloe Cookery School in Cork, Ireland, which gave him his culinary grounding and was a managing consultant for two restaurant projects in Malaysia and China after completing a degree in hospitality from Dundee University.
Allen will continue to celebrate Scottish food and beverages, which can be seen throughout the hotel, including several unique dining venues such as St Andrews Bar & Grill and the Italian eatery La Cucina.
His vision for Fairmont St Andrews will continue to appeal to its broad range of guests, offering culinary classics prepared with Scottish seafood and meats, as well as creatively infused dishes that blend traditional recipes with Scottish produce, the hotel says.
Tristan Allen, director of food & beverage, commenting on his appointment said: “I love seasonal local produce and it is exciting to come to the region of St Andrews Bay where we are taking full and an enthusiastic advantage of the fantastic local larder that is on our doorstep.
“It’s an honour to work with such a talented team, and alongside executive chef, Frank Trepesch. Together working to the ethos of creating dishes with imagination and pride, as well as pairing with exclusive beverages to give guests the world class experience that we are renowned for.”
John Keating, general manager at Fairmont St Andrews said: “We are thrilled to welcome Tristan Allen to Fairmont St Andrews, he shares our passion to deliver the highest standards across our resort and has a diverse and cultural background within hospitality. We are excited to see Tristan develop his success here at the hotel.”
