The group executive chef at Malmaison and Hotel du Vin has announced he will join Macdonald Hotels and Resorts in the same role.
Keith Shearer previously spent 17 years with the boutique hotel chain, managing the food concepts, devising the menus and training programmes across the group’s 42 owned and managed hotels.
He joins Macdonald almost a year after being made redundant from the De Vere Group, where he spent two years directing the food and operations after leaving Malmaison and Hotel du Vin in January 2012.
Shearer also has a strong track record in managing restaurants from concept through to launch; he handled the high profile opening of both Bistro du Vin in London’s Soho and an exclusive afternoon tea offering at Liberty London.
Commenting on his appointment, Keith Shearer said: “I’m very proud to be part of the Macdonald Hotels & Resorts group and am looking forward to working with our talented food and beverage teams and our award-winning restaurants, including over 45 AA Rosettes.”
“The group’s robust policy for only the finest seasonal ingredients and sourcing the best produce available is a breath of fresh air. These values absolutely align with my own and that’s what is so exciting about the new role.
“My philosophy when it comes to food is uncomplicated. I believe in developing a strong understanding of the ingredients you are working with, using the best seasonal produce and creating simple dishes that people really want to eat.”
