The new ‘Fish ‘n’ Trip’ initiative from The Grand Brighton Hotel launched this week, giving guests an insight into the workings of a fish market and advice on how, when and why to buy fresh, local seafood.
The new venture by the 201-bedroom south coast hotel featured a master class from executive chef, and seafood expert, Alan White.
Curious guests sampled breakfast at the hotel’s two AA Rosette restaurant GB1, before heading to the local fish market to learn about the daily catch.
After learning about what’s in season and how to buy the freshest fish, participants then took their ‘catch of the day’ back to The Grand for a master class and tasting session with White.
“I was proud to see our graduates leaving with an inspired view of cooking with fish," enthused the hotel’s proud general manager, Andrew Mosley. "Alan is passionate about classic cooking with a twist and enjoys showing guests how to cook simple but stylish dishes.”
White himself added, “Taking everyone to experience Brighton’s famous fish market was a highlight and gave the group a much deeper understanding of the provenance of their ingredients. Everyone was thoroughly interested in the techniques behind cooking both fish and shellfish and they all created delicious dishes.”
The Grand hopes to build on the success of Fish ‘n’ Trip by running cookery school programmes from July until October 2015, including the Luxury GB1 Cookery Break.
