Stanwell House Hotel, a boutique hotel on the high street in Lymington, launched its new restaurant this month offering guests a taste of tapas in the area.
The independently-owned hotel has opened Burcher & Co following an extensive refurbishment over the past few months, and now offers a more informal restaurant setting for diners.
Stanwell House Hotel dates back to the 18th century and was once owned by James Burcher, cousin to General James Wolf, who spent his last night in this country at Stanwell House ahead of his departure to Quebec in 1759.
It first became established as Stanwell House Hotel around 1945.
The name Burcher & Co was suggested by Stephen Westwater during a Facebook competition the boutique held to find a title for the restaurant.
Head chef Ben Johnson says it’s been a long time coming, but he can’t wait to get his new menu off the ground.
“We have been planning this new venture for months and I have been designing the menu since January! I wanted the food to be contemporary, and yet lend itself to the local area, as they would have had to in 1945, using all the rich natural resources.”
