Farncombe Estate in the Cotswolds has welcomed acclaimed chef Martin Burge to the role of culinary director.
Starting on May 2, Burge will be responsible for driving the foodie experienced at the estate’s three hotels and five dining establishments; Foxhill Manor – an eight-bedroom private house hotel; Dormy House Hotel & Spa and The Fish, a recently transformed collection of quirky houses and five Shepherd Huts in the heart of the 400-acre privately owned estate.
Burge brings 27 years experience to the role, joining from his most notable role at Whatley Manor where he was executive chef for almost 14 years.
It was here where he achieved four AA Rosettes (September 2008) and two Michelin stars (January 2009) for the hotel’s culinary offering, which he retained for nine consecutive years.
Burge also has experience in Raymond Blanc’s kitchen at Le Manoir aux Quat’Saisons, as well as working for John Burton Race at the Michelin two-starred restaurant L’Ortolan in Berkshire and then followed him to The Landmark Hotel, prior to his move to Whatley.
Now as part of his new role, Burge will work to strengthen the hotel’s position on the global stage and look at ways the estate can enhance its dining experience for guests.
