The new executive head chef at Gidleigh Park has now officially started his role.
Michael Wignall has taken over at the luxury hotel in Devon from Michael Caines, who hung up his apron after more than 21 years to pursue new ventures of his own.
Wignall joins from The Latymer at Pennyhill Park and his new position will not only see him lead the kitchen at Gidleigh Park but also consult across the whole F&B offering for Abode Hotels.
Wignall kicked off his new stint in style, welcoming his first guests with a 10-course tasting menu, supported by his new brigade in the kitchen, including 8 chefs who have travelled to Devon with Wignall to continue to be a part of his team.
Wignall comments: “After months of planning, I’m delighted to have delivered our first service here at Gidleigh Park. The team have performed brilliantly, delivering faultless dishes, which generated wonderful responses from our first night guests. Gidleigh Park enjoys an enviable record of excellence, and I’m delighted to take up my place here.”
Describing his own food as ‘modern, technical and meaningful’, Wignall has amassed an impressive list of awards and accolades during his career, including two Michelin stars and five AA Rosettes at The Latymer.
Wignall has introduced new menus to Gidleigh Park, with tasting menus served each evening for dinner and a choice of tasting menus or a three-course menu at lunchtime. A new afternoon tea menu has also been created.
