Luxury Family Hotels has announced the appointment Stuart Shaw as head chef at Thornbury Castle.
The experienced chef joins the historic property, which is one of the few Tudor castles still open as a hotel in England, with a wealth of foodie knowledge gained at the likes of Le Manoir Aux Quat’ Saisons and Northcote Manor.
His most recent role was at The Manor House in Castle Combe, where he was for seven years and earned the restaurant its Michelin star.
Thornbury Castle is home to 26 bedrooms, and its 2 AA Rosette restaurant serving a range of foods from breakfast through to lunch, afternoon tea and dinner.
A highlight is also the dungeon dining, a four-course bespoke dinner menu with canapés designed and cooked by Shaw.
