Matt Weedon has been appointed executive chef at luxury country house hotel, Ellenborough Park.
He joins from his position at the Lamb Inn in Oxfordshire, which he ran alongside his wife, and boasts experience at Lords of the Manor, and Glenapp Castle in Scotland, winning Michelin Stars for both properties.
As part of his new position, Weedon will oversee the hotel’s F&B offering, including the existing 3AA Rosette Beaufort Dining Room, the Brasserie and all other F&B services.

Also joining Ellenborough Park is Louise Armstrong as operations manager. She comes to the hotel from her recent position at Cowley Manor and will now lead all operational areas of the property and will support GM Williams in the ongoing development of the Gloucestershire five-star property.
Ellenborough Park is set on the original Cheltenham Racecourse estate and is part of Pride of Britain Hotels and also the Mr & Mrs Smith collection.
