Conor Toomey has been appointed as the new head chef at Amberley Castle, part of Brownsword Hotels.
South African born Toomey will officially take up his new role on March 6, following 10 years of experience working across the UK, including under Michael Wignall at the two-Michelin starred Latymer at Pennyhill Park.
In 2006, he started working at Pennyhill Park as sous chef to Wignall for four years, before taking up his first head chef position at Coworth Park.
Here he gained 3 Rosettes before moving on to his most recent role as head chef at Storrs Hall in Cumbria, where he replicated this success and earned the restaurant 3 Rosettes within seven months of starting.
Toomey’s biggest influencer Michael Wignall has recently taken over from Michael Caines in the kitchen at Gidleigh Park. He comments: “I’m delighted to welcome Conor to the Brownsword Hotels group and wish him every success at Amberley Castle. His classically influenced style, which delivers a grounding which Conor takes forward with modern techniques, produces outstanding dishes and excellent flavours.”
