Experienced restaurant manager takes on new Nordic restaurant venture


The former restaurant manager at Chiltern Firehouse who oversaw the opening of the Andre Balazs’ boutique, has announced he is to take on the GM role of Aquavit, a new Nordic restaurant due to open later this year.

Ben Hesketh, who worked at Chiltern Firehouse from 2014 to 2015, is to move over to the new restaurant venture that is scheduled to launch in November in the new St James Market redevelopment in London.

Hesketh left Chiltern Firehouse in 2015, and has since been working for the Metropolitan Pub Company overseeing the relaunch of The Mitre in Holland Park.

As well as his involvement at Chiltern Firehouse, Hesketh’s previous roles include overseeing the openings of Coya, and working as restaurant manager of Zuma in Knightsbridge.

The renowned New York Nordic restaurant, Aquavit, has been brought to the UK by Philip Hamilton CEO of Aquavit London and creator of its new all day dining concept, aiming to showcase the best of Nordic cuisine and design.

The menu will be overseen by Emma Bengtsson, executive chef of the two Michelin-starred Aquavit New York, and will be executed by head chef Henrik Ritzen.
