Palé Hall, a new luxury hotel in North Wales due to launch in August, has announced two key appointments ahead of its late summer opening.
Appointed by the hotel’s owners Alan and Angela Harper in collaboration with Michael Caines, Pim Wolfs joins as general manager and Gareth Stevenson as head chef.
Joining from Macdonald Pittodrie House, Aberdeen, where he worked as GM, Wolfs has a wealth of experience in the luxury hospitality industry including six years at Le Manoir aux Quat ‘Saisons.
He says: “I am more than exited to be handpicked by Alan, Angela and Michael to lead the team at Pale Hall. The opportunity to make our mark on an already fantastic food offering in Wales and add to the reasons for people to choose Wales as a destination is wonderful. At Pale Hall we are in a privileged position to provide our guests with a luxury experience provided in a sustainable way combined with the vision of Alan and Angela to provide the best of our local area.”
New head chef Gareth Stevenson has a long experience in luxury hotel kitchens, including being part of the launch team for Michael Caines restaurant at Abode hotel. In 2011, he joined Gordon Ramsay’s Maze, before returning to Abode to take up the position of head chef.

They both bring great depth of knowledge and experience from their respective industries and we look forward to seeing how Palé Hall develops as a result of this.”
Palé Hall is set to become one of the top new openings of the year. One of Wales’s most important surviving homes and dating back to the late 19th century, the property has played host to some very famous faces in its time including Queen Victoria and Winston Churchill.
The Harpers have overseen the complete refurbishment of the 18-bedroom property.
