The restaurant at one of Wales’ newest boutique hotels, Twr Y Felin at St Davids, has been awarded 2 AA Rosettes for culinary excellence.
The fine dining restaurant Blas only opened in March this year in house at Twr Y Felin, which was Wales’ first art hotel and has already racked up 4 AA Silver Star status in its nine months since launch.
Under head chef Simon Coe, Blas restaurant champions local seasonal produce sourced from predominantly Pembrokeshire and Welsh suppliers, as well as foraged ingredients from the surrounding countryside and coast.
Coe said: “The whole team at Blas is so pleased that the AA inspectors rated us worthy of 2 Rosettes in such a short space of time since opening. Our aim is always to reflect the sheer diversity and quality of produce surrounding us. To achieve this accolade so soon is a great endorsement for the direction we are taking Blas restaurant in.”
Twr y Felin Hotel is a former windmill that has been restored and extended into a luxury heritage property and is now home to 21 bedrooms. These include a suite located in the former windmill tower which spans three floors and offers 360 degree views over the St Davids peninsula.
Paula Ellis, group general manager of Twr y Felin and its sister properties in the area, Roch Castle and Penrhiw Hotel, said: “It has been so inspiring to see the progress Simon Coe and our team of chefs have made in quickly establishing Blas restaurant as popular newcomer on the Pembrokeshire restaurant scene. Their vision and hard work has certainly been rewarded with this important culinary accolade.”
