Luxury hotel and restaurant, The Bingham, is set to host a charity dinner on Wednesday 5 October, cooked by celebrated chefs, Paul Merrett and Eric Guignard. Taking place at the stylish riverside property in Richmond, the supper will be held in conjunction with 2nd Chance, a specialist training scheme that supports unemployed 18- to 24-year-olds. Participants are offered the chance to take part in a six-month course, enabling them to gain the experience, skills and qualifications needed to seek employment or undertake an apprenticeship.
As part of the dinner, Paul Merrett, owner and chef at The Victoria Public House, and Eric Guignard, owner and chef at The French Table, will be putting the trainees through their paces, helping them to create a range of mouth-watering dishes. Highlights include hake roasted in serrano ham with smoked chorizo risotto and slow-cooked breast of guinea fowl with shallot purée, beans wrapped in pancetta, fondant potato and truffle jus. Each course will be carefully pared with wines from The Bingham’s extensive cellar.
Both chefs are passionate about the hospitality industry, and believe young people should be given the opportunity to learn and develop their skills. Money raised will be used to fund new 2nd Chance training placements.
