Watergate Bay in North Cornwall will open a "destination restaurant", conceptualised by MD Will Ashworth and executive chef Neil Haydock, on March 15.
Zacry’s, which will draw on Haydock’s passion for American cuisine, will join the hotel’s Living Space and The Beach Hut outlets.
Diners can expect to see inspiration from America with dishes like ‘ZF rabbit, celeriac and apple slaw’.
Other menu highlights include ‘crispy rock shrimp, KP mayo and white truffle oil’ and ‘pork loin chop, truffled maccheroni and greens’, including seasonal Cornish produce with Italian and French ingredients.
“The seasonal menu showcases my love of both classical and contemporary dishes, grilled meat and seafood," said Haydock.
The interiors blend "Cornish attitude" and the features of a classic brasserie, with tan leather banquettes and zinc-wrapped refectory tables on oak and tiled chevron floors.
Large tables share the space with smaller booths, there is also a private dining room seating up to 16 people and a decked terrace.
Ashworth said: “When thinking about the qualities we wanted, high on the menu was a restaurant that is warm, congenial and inclusive”.
