The Atlantic Hotel in Jersey has appointed Will Holland as executive chef to head up the award-winning Ocean Restaurant from October 2017.
The announcement follows on from the news on Friday that Holland is to depart his role as head chef at Coast Restaurant in Pembrokeshire, Wales, part of The Seren Collection owned by Neil and Zoe Kedward.
Holland will take over from executive chef Mark Jordan, who has been at the helm of Ocean Restaurant for the last 13 successful years. He will leave at the end of the summer season, before Holland then steps in.
Patrick Burke, managing director and owner at The Atlantic Hotel said that there was a ‘great deal of interest in the position from some of the finest young chefs in the country’, but Holland emerged as the ‘stand-out candidate’.
Holland has been working in Michelin-starred restaurants since the age of 18 and was awarded a star before he was 30.
Launched by Holland and The Seren Collection, Coast Restaurant was awarded 2 AA Rosettes just five days after opening in 2014 and won AA Restaurant of the Year for Wales in 2015.
