Burley Manor in the New Forest has introduced a new 15-mile lunch menu, further strengthening its commitment to sustainable ingredient sourcing.
The new menu, launched this month, only using ingredients from within a 15-mile radius and shows guests where each one was sourced through a visual menu map.
The chefs at Burley Manor worked closely with their local suppliers, from Lymington to Salisbury to Ipley, to create a menu for all tastes, with the initiative spearheaded by executive head chef Ben Johnson.
Johnson, says: “Along with the whole team at Burley Manor, I strive to support local businesses and show our commitment to sustainability. Our new 15-mile menu is created depending on what is available at the time of year, within a 15-mile radius or less, straight from land to plate. The menu is true to the seasons and will vary depending on what our supplier provides for us, influenced by the south of England.”
Burley Manor is a restaurant with rooms, part of the New Forest Hotels Group, comprising 40 bedrooms.
