Details emerge for multi million pound Great Scotland Yard Hotel as management team is revealed

Great Scotland Yard Hotel, London is to open as the first hotel in the UK under the Unbound Collection by Hyatt when it launches in the summer, and will be headed up by general manager Sholto Smith.

London developer Galliard Group has spent the last three and a half years converting the former HQ of the Metropolitan Police into a new luxury 152-bedroom hotel after acquiring a 125-year Crown Estate lease, which was exchanged for a forward sale of the hotel when completed to Abu Dhabi based LuLu Group International in 2016 for £110m.

Now it’s been revealed that Smith will head up the new venture, having held various positions previously with the Hyatt brand both in Australia and London. He joins from his most recent role as general manager at Hyatt Regency Perth, where he has been since 2015.

Joining him will be chef restaurateur Robin Gill, the founder of The Dairy in South London, who will oversee all of Great Scotland Yard’s food and drink operations in his first foray into the hotel industry.

Alex Harper, who Gill met whilst working for Le Manoir, will take up the role of executive chef, while Lewis Wright has been appointed general manager for food and beverage.

There will be a host of new F&B outlets introduced when the hotel opens in a few months’ time. The Yard will be a modern British restaurant; cocktail bar The Forty Elephants will celebrate ‘off-beat underground London, while The Parlour will be a modern tearoom.

Second drinking space, Sibin, will be a more intimate whisky bar, while the hotel’s basement will be home to events space, Grace and Favour.

There will also be house-made gin and an in-house butchery and bakery.

Gill comments: “This is not just a food and beverage concept in a standard hotel, we have created something completely different!

Great Scotland Yard is a historical institution so we had to be bold, bringing a new chapter and attitude not only to the building but also to Westminster. As with my other restaurants, we’ll be taking a back to basics approach; we will be baking from scratch, butchery and ageing will be done on site, and we will only work with the most passionate growers in the country.”

Sholto Smith adds: “I am thrilled to be opening Great Scotland Yard as part of The Unbound Collection by Hyatt. Not only as this is the first in the UK, but also due to the collaboration with chef extraordinaire, Robin Gill, who promises to deliver an amazing and truly one-of-a-kind food and beverage offering like no other hotel in London.”
