The Coniston Hotel Country Estate & Spa, near Skipton, has announced the appointment of a new head chef to take the helm of 2 AA Rosette restaurant, Macleod’s.
Andy Collop joined The Coniston at the end of March 2019, following four years working at Grassington House Hotel where he was promoted from sous chef to head chef.
Collop will be responsible for driving the restaurant forward, improving standards and creating new dishes for guests and non residents.
Commenting on the new role, Andy Collop, Head Chef of Macleod’s said: “I’m very excited to have taken up the position as Head Chef of Macleod’s. It’s a fantastic time for the restaurant after it was awarded 2 AA Rosettes in November 2018. I’m looking forward to building upon the restaurant’s reputation, creating new menus that showcase the fantastic local produce that we have on our doorstep in the Yorkshire Dales. working towards further accolades in the future.”

Executive chef Simon Bolsover joined the estate in February 2018 to drive the hotel’s F&B offering.
The Coniston, which is owned by the Bannister family, now employs over 200 staff across the hotel and estate of which over 60 work within the food and beverage team.
