Augill Castle is to introduce a ‘completely new’ dining experience spearheaded by the appointment of chef Justin Woods.
The luxury five-star hotel in Kirby Stephen is to unveil Justin Woods @ Augill in November to bring a new F&B destination to the business.
Woods joins from his role at Kendal’s Castle Green Hotel where he was executive chef.
He brings with him a wealth of experience to Augill Castle, having trained under John Burton-Race at the two Michelin starred L’Ortolan in London.
He then spent 13 years at The Lanesborough at Hyde Park Corner, rising from commis chef to executive sous chef.
During his time there he was seconded to hotels in Saudi Arabia, USA and France.
Woods comments on the new menus he will introduce: “Let’s look at more local farmers and producers and really see what amazing things we can find in the Eden Valley and surrounding area.”
