Chef and restaurateur Jason Atherton is to open his newest venture at new London property, The Biltmore in Mayfair on September 19.
Atherton will oversee the hotel’s flagship restaurant, The Betterment, as well as lead The Biltmore’s entire F&B offering, marking a return to Grosvenor Square for the chef and his team, who launched Maze in 2005.
The Betterment’s head chef will be Paul Walsh, who launched and led Jason Atherton’s City Social for five years and achieved the restaurant’s Michelin-starred status within seven months of it opening.
The Betterment’s seasonally-driven menu will feature dishes of wood-fired fish and meats, fresh seafood, signature salads and plant-based plates.
At the heart of the restaurant will be a rustic open grill, which will bring the kitchen into the dining room and add a sense of theatre to the space.
The space has been designed by Epicurean and brought to life by Goddard Littlefair.
As well The Betterment restaurant, Atherton and his team will also oversee The Pine Bar.
The Biltmore Hotel is currently undergoing a complete £50m refurbishment to be transformed from the former Millennium Hotel to become Europe’s first LXR location.
Atherton commented: “To be working with LXR Hotels & Resorts on the launch of The Biltmore Hotel this June is incredibly exciting. When we were approached to head up the hotel’s food and beverage offering, including its flagship restaurant, we just knew it was an opportunity we couldn’t let pass. My wife Irha and I chose the name The Betterment because we wanted it to encapsulate our journey from opening Pollen Street Social in 2011 until now, highlighting the progress in our food, ethos and way of thinking. To be returning to Mayfair’s Grosvenor Square after nine years is very special to me, and I’m thrilled to be doing it alongside world class chef and friend, Paul Walsh.”
