Chef Simon Bolsover and former commercial director at Journey team up to relaunch Herefordshire hotel

A hotel in Herefordshire has unveiled its new-look interiors after a £2.5m renovation project under its new owners.

The Green Dragon Hotel was acquired by Julian Vaughan, the former commercial director at hotel tech and marketing company, Journey, in 2018, with executive chef Simon Bolsover coming on board in July this year to reinvent the dining offering.

Bolsover joined from his role as executive chef at The Coniston Hotel in Yorkshire where he had been since February 2018.

Now the Grade-II coaching inn has been restored to its former glory following the phased refurbishment.

The Green Dragon’s 83 bedrooms have been given a makeover and a new dining experience led by Bolsover introduced, called The Hereford, with the interiors overseen by Harding and Read.

The new 90-cover Brasserie has a focus on Herefordshire produce.

Alongside the restaurant, there is also the Offa Bar and extensive meeting and banqueting facilities, including a ballroom for 120 guests.

Vaughan was previously commercial director at Journey from July 2014 until July 2018 and then helped transform Dewsall in Hereford into a wedding and events venue.
