André Garrett, cxecutive chef of Cliveden House, in Berkshire, has announced the appointment of Paul O’Neill as new head chef of the restaurant, André Garrett at Cliveden.
A Roux Scholar in 2013, O’Neill has boasted roles at the likes of Ashdown Park Hotel, The Ostrich in Colnbrook, Berkshire, Felbridge Hotel and The Goodwood Hotel in Chichester in their gastropub.
He joins from his position at Berwick Lodge Hotel’s Hattusa Restaurant in Bristol where he has been for the last three years since 2014.
O’Neill started his culinary career in 2001 at Claridge’s in London as a commis chef for room service, the bar and restaurant, and quickly progressed to first commis on banqueting.
Junior positions followed at The Angel Hotel in Midhurst, then at Exsurgo Restaurant in Midhurst, the Lodge de Village in Méribel, France, for a winter season (as head chef for an Italian restaurant in the ski resort), and The Chequers Inn, in Rowhook, West Sussex, for a year in 2006.
He will join the kitchen brigade at Cliveden from mid-November to work alongside André Garrett at the hotel’s 3 AA Rosette 68-seat restaurant.
