Five-star Merchant Hotel in Belfast invests £750k into creating ‘standalone restaurant identity’

The Merchant Hotel in Belfast is to sink £750k into a refurbishment across some of its most iconic space, including its restaurant and cocktail bar.

The hotel, which is owned by Beannchor Group, will plough money into giving its Great Room Restaurant a new look, to ‘accentuate and celebrate’ the original features of the Grade A listed building.

The restaurant will be reimagined to create more of a standalone restaurant identity, with a dramatic centrepiece installed to highlight the vaulted dome ceiling.

The Cocktail Bar will also be given an uplift with new furnishings and titanium granite bar top and table.

To coincide with the unveiling of the completion of the project, a new cocktail book from The Merchant Hotel will be revealed.

Commenting on the investment, Bill Wolsey, managing director, Beannchor said: “When The Merchant opened in 2006, it was unlike anything ever seen in Belfast. We’re extremely proud of this legacy and the achievements of our team over the last 14 years, but we cannot stand still. This important refurbishment is a reflection of our commitment to continuing to exceed the expectations of our guests, in line with the changing demands of our discerning clientele.”

Gavin Carroll, general manager, The Merchant Hotel added: “The Merchant is renowned for its world-famous hospitality and this significant investment will help us to refine and evolve our offering, ensuring we continue to offer unforgettable experiences for our guests. We’re looking forward with excitement to this new era for The Merchant Hotel and to sharing this exciting new chapter with our guests.”
