Northern Ireland’s Galgorm Collection is to open a new dining space to mark the completion of the first phase of a transformation project of The Rabbit Hotel.
Formerly The Templeton, Galgorm Collection acquired the property in 2019 and has invested £7m into developing the business into a new-look boutique hotel with 24 bedrooms and a new outdoor spa offering, due to open later this year.
Tomorrow will see the launch of the new Rabbit Bar and Restaurant as part of the first stage of renovation at the Templepatrick, Co Antrim venue.
The restaurant will feature a menu inspired the ‘American deep south’ and boasts 180 covers as well as a large outdoor terrace.
The Rabbit Bar & Restaurant refurbishment represents an investment of £2.5m into the property.
In addition to the accommodation, spa and bar and restaurant offering, a new banqueting suite and wedding venue, ‘The Loft’, is also set to launch later this year at The Rabbit.
Galgorm Collection managing director, Colin Johnston, said: “The multi-million pound project to transform and redevelop the former Templeton Hotel commenced in October last year and it represents a significant investment in the local economy, cementing our longstanding commitment to support and grow our tourism industry.
“We’re excited to reveal The Rabbit’s new name and announce plans for its full opening later this year. While work continues on preparations for the hotel’s accommodation and spa area, it’s fantastic to be able to unlock the doors to The Rabbit Bar & Restaurant and welcome locals and visitors alike.”
The newly named and refurbished property adds to Galgorm’s portfolio of hospitality investments, which includes £1.5 million in Belfast-based restaurants’ Fratelli & Café Parisien and the £600,000 purchase and refurbishment of the Castle Kitchen + Bar at Galgorm Castle Golf Club in 2018.
