The Salutation Hotel, owned by Steph and Dom Parker of Channel 4’s Gogglebox fame, is to launch a pop up restaurant to tempt guests ahead of the eatery’s official relaunch in the summer.
The Grade-I listed property has also brought in new management under the direction of John Fothergill who is overseeing the hotel’s refurbishment, as the bedrooms, dining room and kitchen are transformed.
In anticipation of the restaurant launching in June, The Salutation will host a ‘pop-up’ from Thursday, 13 April to Sunday, 16 April, with new head chef Shane Hughes set to create a spring tasting menu.
Hughes joins the 17-bedroom hotel from his role as head chef at Thackeray’s in Tunbridge Wells, where he had been since 2014 with restaurateur Richard Phillips.
Other career highlights include stints at The Connaught, The Landmark and seven years at Ynyshir Hall in Wales.
Sir Edwin Lutyens designed and built The Salutation in 1912 in Sandwich, Kent, as a country retreat for the three wealthy Farrer brothers.
In 1950, the house became the first 20th century building to be granted a Grade-I listing by English Heritage.
The hotel and restaurant is spread across the main house and its three surrounding cottages, sat within the award-winning 3.7 acre Salutation Gardens.
While the property is still owned by Dom and Steph, they are no longer involved with the day-t-day management of the business
Hughes’ arrival at The Salutation is part of a major renovation and enhancement programme that is aiming to make the hotel and restaurant and key destination for dining and overnight accommodation.
