Michelin-star chef Ian Swainson has been named as the new head chef at South Lodge Hotel’s The Pass restaurant.
He takes over from Matt Gillan who leaves the hotel, part of the Exclusive Hotels and Venues group, at the end of April after ten years at South Lodge Hotel in Horsham.
Swainson joins from his role at luxury country house hotel, the Samling in Cumbria, where he earned the restaurant 3 AA Rosettes and a Michelin star which he has held for the last three years.
Prior to that he spent time working in top hotels and restaurants around the UK, including l’ortolan in Reading, Seaham Hall in County Durham, Le Becasse in Ludlow and Chewton Glen.
