MARKET MARVELS: Sue Williams, general manager, Whatley Manor Hotel


In 1989, Sue Williams joined Le Manoir aux Quat’Saisons, and got her first taste of life in the five-star sector. She worked her way through the ranks over 12 years, starting as guest services manager ending as operations manager.

She then joined The Bath Priory as general manager in 2002, and subsequently took on a group role looking after Sydney House, Chelsea, London, from 2003, and Gidleigh Park in Devon from 2005, overseeing the complete refurbishment and reopening of the hotel in 2006.

Sue was appointed general manager at Cliveden House in the summer of 2012, where she oversaw the full refurbishment of the iconic property. In 2016, when the role of general manager at Whatley Manor became available, Sue threw her hat in the ring.

Having lived only a few miles away from the hotel at Grittleton for a number of years, she had admired the way the property had grown and developed.

In September 2016 Sue took the helm as general manager, taking the hotel into the next phase of its development and consistently striving to ensure Whatley Manor’s success story continues.

A first Michelin star was awarded to The Dining Room, under executive chef Niall Keating, in 2018, less than a year after the young chef joined the ranks. Niall continues to thrive under Sue’s leadership and was awarded the title of Michelin Young European Chef of the Year 2018 last year.

Sue has also recently overseen a £500k refurbishment of Whatley Manor’s main kitchen as well as an interior upgrade of the hotel’s bedrooms in February 2019 as she works to position Whatley Manor as one of the country’s best hotels.
