Acclaimed chef Michael Caines is set to open a new luxury country retreat in Devon in spring 2017.
Lympstone Manor is currently undergoing a completed restoration and renovation programme, headed up by Caines and his team, to transform the former private home into a 21 bedroom hotel, complete with a 60-cover fine dining restaurant.
With Caines at the helm of the new hotel, exceptional cuisine and wine will lie at the heart of the experience. The chef, who previously held two-Michelin stars for 18 consective years during his time at Gidleigh Park, has taken a year out to develop Lympstone Manor, which will be home to three diring rooms.
Each with its own decor and identity, Haldon, Mamhead and Powderham, all overlook the Exe Estuary, with plans afoot to plant a vineyard on the slope leading down to the area on the estate.
Caines has created an extensive wine list for Lympstone Manor together with co-director Steve Edwards and there are two basement cellars as well as a wine tasting and dispense room opposite Lympstone Manor’s three dining rooms located on the ground floor.
The interior for Lympstone Manor will be created by Meraki, a design duo who will bring warmth and character to the property. The brief was to create a ‘sense of escapism, while reflecting the poetic beauty of the Devon countryside’.
The 21 guest rooms will all be named after birds that live in and around the estuary, with most bedrooms coming with their own terrace. The Heron is one of the two luxury superior estuary suites, complete with a lounge and two side-by-side baths, while three Grand Estuary Suites and three ground floor Master Estuary Suites have an outdoor fire table and soak tub.
“The opening of Lympstone Manor is the realisation of a dream,” says Caines. “Everything that I have achieved in my long career has brought me to this point where I can fully express my vision of contemporary country house hospitality for the 21st century.”
