A new chef has been appointed at Ston Easton Park in Somerset.
Ashley Lewis joins the country house hotel boasting experience at the likes of Llangoed Hall in Wales and three Michelin-starred The Waterside Inn, Bray, and will now unveil a new seven-course tasting menu.
The new menu will showcase the property’s garden produce, as well as that procured locally.
On his recent appointment, Lewis said: “It is essential that the cuisine matches the surroundings, and I take inspiration from everything that makes Ston Easton Park special to give guests a fitting, original, and tasty dining experience.”
The 18th century hotel is situated within 36 acres of private parkland with the majority of fruits and vegetables used in many of the new menu’s courses grown within the gardens.
As well as home-grown and local produce, the new tasting menu features classical flavours with French and Asian influences with dishes such as torched mackerel with Dorset crab apple jelly; foie gras with rhubarb chutney; pan-fried red mullet with lemon puree and duck breast with Lyonnaise-style potatoes, milk chocolate mousse and fruit sorbets.
Ston Easton Park is home to 20 bedrooms and is run alongside its sister hotel Sharrow Bay in the Lake District.
