A new head chef has joined the ranks at the Swan at Lavenham Hotel and Spa, as the property unveils two refreshed restaurants for summer dining.
Olivier Bertho joins the 15th century Suffolk hotel after 18 years spent working with Woburn Enterprises, where he held various positions including executive chef.
He also boasts experience as head chef at Mallory Court.
Bertho moved to England from France in 1993.
In his new role, he will lead an extensive team to oversee all F&B, from MICE to afternoon tea and weddings, and has introduced two new menus at the hotel’s revamped restaurants.
The Swan at Lavenham Hotel is home to the Gallery restaurant, or more informal Mess Call 487, which have both been refreshed with new chairs and designs.
Menus now boast a French flair, with Bertho full of ‘innovative ideas’ for developing the hotel’s afternoon tea offering.
