Restaurant Manager

The winner of the Restaurant Manager of the Year accolade was Craig MacFarlane from Rothay Manor.

Craig is a firm believer in experiential and shared learning experiences. He has taken a structured approach to his team’s training and development with planned learning opportunities that are specifically designed to enhance team working skills within his restaurant.

He has arranged for external professional bodies to attend and deliver on site training to meet specific needs, for example every member of the team is currently undertaking level 1 Wine & Spirit Education Trust training to gain a basic knowledge of the wines within the list and several have also begun to undertake level 2 to further enhance their knowledge, with shared learning taking place on site at the hotel and off site at Kendal College.

He organises regular producer site visits, so that all members of the restaurant team are able to gain a valuable insight and understanding of the provenance of the ingredients that feature within the menus they serve.
