Chef Nathan Outlaw is to open a new seafood restaurant at The Goring, the only family-owned and run five-star hotel in London.
The chef, who announced he was to close his restaurant at The Capital late last year after six years, will open the new eatery in late spring 2019, ensuring it has a ‘heavy tilt’ towards Cornish produce.
The new addition, which is yet to be named, will be the first time in over 100 years that The Goring has launched a new restaurant, and will join the hotel’s flagship Michelin star, 3 AA Rosette eatery, The Dining Room, which is headed up by executive chef Shay Cooper.
CEO Jeremy Goring said that the new restaurant will look to showcase the best of Cornish seafood and produce and he was ‘looking forward to bringing the West Country treasure to London’.
“Some of the best seafood in the world comes from the pristine waters around Cornwall” says Goring. “We’re looking forward to bringing this West Country treasure to London, with the help of Nathan Outlaw.”
The restaurant will be a more casual offering to The Dining Room and will be situated in an orangery, with the architecture and design overseen by Russell Sage.
Goring adds: “We’re building an eccentric, uplifting space with the help of some very special craftsmen and designers, and the restaurant will be all about simplicity on the plate, freshness, and our usual heartfelt British service.”
The new restaurant isn’t the first time the hotel has championed Cornish produce; last year they ran a seafood pop-up with Outlaw’s former mentor Rick Stein.
According to London newspaper, The Standard, Outlaw will spend two days a week in the kitchen at The Goring and is already busy designing dishes and creating the new menus.
Chef Outlaw has been a friend of the Goring family’ holiday cottage, The Chapel in Port Issac in Cornwall, where he also has a two-Michelin star restaurant, for many years.
Nathan Outlaw commented: “Creating a new restaurant with such an iconic British hotel is a huge highlight in my career. I can’t wait to get cooking!”
In total, Outlaw operates four restaurants, three in Cornwall, including Restaurant Nathan Outlaw in Port Isaac, and one in Dubai.
The Goring was opened in 1910 by Jeremy Goring’s great grandfather. Now the five-star hotel boasts 49 bedrooms and its Michelin star restaurant.
