The Hoxton Holborn will welcome Detroit-style pizza restaurant Four Corners for a three-month residency at its natural wine bar and pop up space Rondo La Cave.
The hotel’s flagship restaurant is called Rondo and serves a modern British menu of seasonal dishes, alongside natural wines. Rondo La Cave is found in a basement space underneath and acts as both a pop up venue welcoming established brands and an incubator kitchen for new F&B concepts from The Hoxton brand, which may well be primed for a rollout.
Four Corners champions Detroit-style square pizzas and the menu has been designed in collaboration with chef and pizza expert Anthony Falco, who has previously written a cookbook dedicated to pizzas, as well as consulting for pizza brands and restaurants in over 15 countries.
Highlights from the Four Corners menu will include:
‘Red Top’: cheddar, mozzarella, Sicilian oregano, pecorino and tomato
‘Vodka Meatball’: cheddar, mozzarella, vodka sauce, meatballs, basil oil, parmigiano and pecorino
‘Beef and Onions’: smoked entrecote, mozzarella, roasted red onions, white onions, sumac, paprika and pomegranate molasses
‘Pistachio Pesto & Mortadella’: pizza with pistachio pesto, mozzarella, mortadella, pistachio and parmigiano
Side dishes are also available, including ‘Italian chopped salad’ with salami, olives and housemade sourdough crouton and ‘Grandma’s Meatballs’: beef meatballs in a tomato sauce with basil and parsley, topped with housemade sourdough breadcrumb.
Guests can wash down their pizzas with Rondo La Cave’s list of diverse, low-intervention wines, available by the glass, bottle and magnum.
Four Corners will open at Rondo La Cave on 1 December.
