The newest Hoxton hotel to open in Southwark in September is to be home to a rooftop restaurant on its 14th floor, developed in partnership with an award-winning F&B duo from Brooklyn.
Seabird will launch this autumn when The Hoxton Southwark opens its doors, and will mark a new venture between the boutique brand and Premiere Enterprises, founded by James Beard duo Joshua Boissy and Krystof Zizka of New York’s Brooklyn hotspot, Maison Premiere.
The restaurant will boast a marble raw bar, London’s longest oyster list, which takes centre stage in the eatery. The menu draws inspiration from the Mediterranean, with an emphasis on Portuguese and Spanish falbours, embracing a ‘sea-to-table’ ethos.
William Elliott, the bar director of Maison Premiere, has crafted Seabird’s creative drinks list, which focuses on exotic cocktails available on draught, bottled or frozen.
The space will have whitewashed floors, greenery and colourful Mediterranean tiles, with floor to ceiling windows and handmade scallop tile-topped tables.
The eighth Hoxton Hotel in the portfolio, the new property in Southwark will mark the brand’s third property to launch in London, following The Hoxton Shoreditch in 2006 and The Hoxton Holborn in 2012.
The Hoxton is also open in Paris, Amsterdam, New York, Portland and most recently Chicago. The Hoxton LA will also follow this summer.
The company is owned by Ennismore, headed up by entrepreneur Sharan Pasricha.
